This Lemon Honey Garlic Chicken Cucumber Sandwich is the perfect combination of crispy chicken, sweet and tangy sauce, spicy chipotle aioli, and an incredibly refreshing cucumber salad. Ingredients:
For the Chicken
- 4 boneless chicken thighs
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Cajun seasoning
- 1 tsp butter garlic seasoning
- 1 tsp paprika
- salt (to taste)
- pepper (to taste)
For the Cucumber Salad
- 2 cucumbers (thinly sliced)
- 1/2 red onion (thinly sliced)
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 1 tbsp chili crunch
- salt (to taste)
- pepper (to taste)
For the Chipotle Aioli
- 1/2 cup mayonnaise
- 2 chipotle peppers in adobo sauce
For the Lemon Honey Garlic Sauce
- 2 tbsp butter
- 1 tbsp soy sauce
- 2 cloves garlic (minced)
- 2 tbsp lemon (juiced)
- 2 tbsp honey
For Bredding & Assembly
- 1 cup all-purpose flour
- 2 eggs (beaten)
- 2 cups cornflakes (crushed)
- 4 ciabatta rolls
- fresh parsley

Directions
- Season the chicken thighs with olive oil, garlic powder, onion powder, Cajun seasoning, butter garlic seasoning, paprika, salt, and pepper.
- In a large bowl, combine the cucumbers, red onion, honey, olive oil, white balsamic vinegar, chili crunch, salt, and pepper. Toss well and set aside.
- To make the aioli, blend the mayonnaise and chipotle peppers until smooth.
- Dredge each chicken thigh in the flour, then the eggs, then coat completely with the crushed cornflakes.
- Preheat your air fryer to 375°F.
- Air fry the breaded chicken for 12–15 minutes or until golden brown and cooked through.
- While the chicken cooks, whisk together the butter, soy sauce, garlic, lemon juice, and honey to create the sauce.
- Toss the cooked chicken in the lemon honey garlic sauce until fully coated.
- Toast the ciabatta rolls.
- Spread chipotle aioli onto both sides of the bread.
- Add the sauced chicken, top with cucumber salad, and finish with fresh parsley.
- Serve immediately and enjoy.
