Directions
- Julienne or ribbon your cucumbers and carrots into thin, even strips.
- In a large bowl, combine the cucumber, carrot, sesame seeds, parsley, and minced garlic.
- Add olive oil, lemon juice, gochugaru, soy sauce, and sugar to the bowl.
- Toss everything well until the salad is evenly coated with the dressing.
- Let sit for 5–10 minutes to let the flavors meld.
- Serve chilled or enjoy straight from the bowl!
