Instructions

  1. Preheat your oven to 325°F (165°C). Line a roasting tray with foil and place a roasting rack inside if available.
  2. Make the honey mustard glaze: In a saucepan, melt 1/2 cup butter over low heat. Stir in 1 cup honey and 3 tablespoons Dijon mustard until smooth and combined. Let it cool slightly.
  3. Prepare the ham: Place the spiral ham cut-side down in the roasting tray. Using a basting brush or spoon, thoroughly coat the entire ham with the honey mustard glaze, making sure to get inside all the spiral slices for full flavor penetration.
  4. Roast the ham uncovered for 2 hours, basting every 30–40 minutes with any remaining glaze and the juices from the bottom of the tray. This will build up a flavorful outer crust and keep the inside moist.
  5. Meanwhile, make the pineapple jerk glaze: In a small saucepan, combine 2 cups pineapple juice, 2 tablespoons grainy mustard, 1/4 cup brown sugar, 2 tablespoons honey, and 1 tablespoon dry jerk spice.
  6. Simmer the glaze over medium heat, stirring occasionally, until it reduces and thickens slightly (about 10–15 minutes). Set aside.
  7. Final glaze: During the last 20 minutes of roasting, generously spoon or brush the pineapple jerk glaze over the ham. Let the sugars caramelize and create a sticky, golden finish.
  8. Rest before serving: Remove ham from the oven and let it rest for 10–15 minutes. Slice and serve warm with extra glaze drizzled on top.
