Homemade Beignets
Ingredients:
- 2/3 cup whole milk (warm)
- 1/4 cup granulated sugar
- 1 packet instant yeast
- 1 egg (large; room temp)
- 2 tsp vanilla extract
- 3 tbsp unsalted butter (melted & cooled)
- 2 1/3 cups all purpose flour
- 1 1/4 tsp salt
- neutral oil (for frying)
- powdered sugar (for dusting)

1. Activate the yeast
In a bowl, whisk together warm milk, sugar, and yeast. Let sit 5 minutes until slightly foamy.
2. Make the dough
Whisk in egg, vanilla, and melted butter.
Add flour and salt gradually, mixing until a soft dough forms.
3. Knead
Knead 5–6 minutes (by hand or mixer) until smooth and slightly tacky, not sticky.
4. First rise
Place dough in a greased bowl, cover, and let rise in a warm spot for 1–1½ hours, until doubled.
5. Roll & cut
Punch down dough and roll to ¼-inch thickness.
Cut into 2½-inch squares using a knife or pizza cutter.
(Optional but recommended)
Let cut dough rest 10–15 minutes before frying for extra fluff.
6. Fry
Heat oil to 350°F. Fry 3–4 at a time, 1–2 minutes per side, until golden and puffed.
Drain on paper towels.
7. Finish
Dust generously with powdered sugar while warm. Don’t be shy.
