Grinder Sandwich with Lemon Dill Hummus
Ingredients:
For the Grinder Salad
- 2 cup Iceberg lettuce (Shredded)
- 1/4 cup Red Onion (Thinly Sliced)
- 1/4 cup Banana Peppers (Chopped)
- 1 tbsp Olive Oil
- 1 tbsp Red Wine Vinegar
- 1/2 tsp Italian Seasoning
- Fresh Cracked Black Pepper
For the Sandwich
- 2 Hoagie Rolls
- 4-6 tbsp Ithaca Lemon Dill Hummus
- 6 Deli Turkey (Slices)
- 8 Salami (Slices)
- 4 Provolone Cheese (Sliced)
- 1 Tomato (Sliced)
- 1 cup Kettle Chips (Lightly Crushed)
- Parchment Paper (For Wrapping)

Instructions
- In a medium bowl, combine the shredded lettuce, red onion, banana peppers, olive oil, red wine vinegar, Italian seasoning, and black pepper. Toss until evenly coated.
- Slice the hoagie rolls in half and spread a generous layer of Ithaca Lemon Dill Hummus on both sides of the bread.
- Layer the provolone cheese, turkey, salami, tomato slices, and grinder salad onto the rolls.
- Top with crushed kettle chips for extra crunch.
- Close the sandwiches and wrap tightly in parchment paper.
- Using a sharp knife, slice each sandwich in half through the parchment paper.
- Serve immediately and enjoy!
