Ingredients:
- 6 lobster tails
- 6 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tsp red chili flakes (optional)
- 2 tbsp fresh parsley, chopped
- 2 lemons
- Salt and pepper, to taste
Instructions
- Prep the lobster: Using kitchen shears, slice down the top of each lobster tail shell and gently pull the meat up to rest on top. Pat dry.
- Make the butter: In a small saucepan, melt butter with minced garlic over low heat. Add a pinch of chili flakes and fresh parsley if desired.
- Fire up the grill: Heat grill to medium-high. Place halved lemons cut-side down on the grill. Cook until charred, about 3–4 minutes. Set aside.
- Grill the lobster: Brush the lobster meat generously with the garlic butter and grill flesh-side down for 4–5 minutes. Flip, baste again, and cook for another 2–3 minutes until opaque and slightly charred.
- Serve: Plate the lobster tails with the grilled lemons and extra butter for dipping. Squeeze lemon over just before serving for that chef’s kiss finish.
