Lemon Roasted Potatoes
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss halved potatoes with olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper.
- Spread the potatoes on a parchment-lined baking sheet in a single layer.
- Roast for 35–40 minutes, flipping halfway through, until golden and crispy.
Greek Beef Meatballs
- In a large bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, egg, parsley, and spices. Mix until well combined.
- Shape into small, even-sized meatballs.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 6–8 minutes, turning occasionally, until browned and cooked through.
Greek Salad
- In a large bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Drizzle with olive oil and red wine vinegar, then season with salt and black pepper. Toss to combine.
- Top with crumbled feta cheese and garnish with additional herbs if desired.
