Lemon Roasted Potatoes
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss halved potatoes with olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper.
  3. Spread the potatoes on a parchment-lined baking sheet in a single layer.
  4. Roast for 35–40 minutes, flipping halfway through, until golden and crispy.
Greek Beef Meatballs
  1. In a large bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, egg, parsley, and spices. Mix until well combined.
  2. Shape into small, even-sized meatballs.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 6–8 minutes, turning occasionally, until browned and cooked through.
Greek Salad
  1. In a large bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives.
  2. Drizzle with olive oil and red wine vinegar, then season with salt and black pepper. Toss to combine.
  3. Top with crumbled feta cheese and garnish with additional herbs if desired.
