Freezer Breakfast Burritos (High-Protein, EBT-Friendly)
Ingredients:
- 8 eggs (large)
- 1 lb breakfast sausage (or ground turkey (EBT-friendly))
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup hash browns (or frozen diced potatoes (EBT-friendly))
- 1/2 cup onion (diced)
- 1/2 cup bell pepper (diced)
- 8 tortillas
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper

Instructions
- Cook the potatoes. Heat olive oil in a large skillet over medium heat. Add frozen potatoes and cook 6–8 minutes until lightly crispy. Remove and set aside.
- Brown the protein. In the same skillet, cook sausage or ground turkey with diced onion and bell pepper until fully cooked and lightly browned.
- Scramble the eggs. In a bowl, whisk eggs with salt and pepper. Pour into the skillet and scramble gently until just set.
- Combine. Stir cooked potatoes back into the egg mixture. Remove from heat.
- Assemble burritos. Lay tortillas flat. Add egg mixture down the center, sprinkle with shredded cheese, then roll tightly into burritos.
- Freeze. Wrap each burrito individually in foil or parchment paper. Store in a freezer-safe bag for up to 3 months.
- Reheat. Microwave 1–2 minutes (wrapped in a paper towel) or heat in oven at 350°F until warmed through.
