Instructions

  1. Cook the potatoes. Heat olive oil in a large skillet over medium heat. Add frozen potatoes and cook 6–8 minutes until lightly crispy. Remove and set aside.
  2. Brown the protein. In the same skillet, cook sausage or ground turkey with diced onion and bell pepper until fully cooked and lightly browned.
  3. Scramble the eggs. In a bowl, whisk eggs with salt and pepper. Pour into the skillet and scramble gently until just set.
  4. Combine. Stir cooked potatoes back into the egg mixture. Remove from heat.
  5. Assemble burritos. Lay tortillas flat. Add egg mixture down the center, sprinkle with shredded cheese, then roll tightly into burritos.
