These easy lamb chops are packed with flavor and perfect for a quick dinner. The marinade is totally flexible and “vibe-dependent,” making this dish both delicious and approachable for home cooks.

- To make the marinade, add all ingredients to a blender. Add enough extra virgin olive oil so the mixture can drip off a spoon easily. Adjust other ingredients to taste while blending.
- Rub the marinade generously over the lamb chops.
- Marinate overnight, or for at least 6–8 hours for best flavor and tenderness.
- Preheat oven to 250°C (480°F). Arrange the lamb chops on a baking tray lined with parchment or foil.
- Roast for 10 minutes, flipping halfway through. Adjust the time slightly depending on desired doneness and oven strength.
- (Optional) Drizzle a little hot honey over the top just before serving.
- Serve immediately and enjoy!
