Creamy Lemon Pepper Salmon Bites
Ingredients:
Salmon
- 1 lb salmon, skin removed and cut into bite size cubes
- 1 1/2 tsp lemon pepper seasoning
- 1/2 tsp paprika
- salt to taste
- 1 tbsp avocado oil
- 1 tbsp butter
Creamy Lemon Sauce
- 3 cloves garlic, minced
- 1/2 cup heavy cream (or half & half for lighter)
- 1/4 cup chicken broth
- juice of 1/2 lemon
- zest of 1 lemon
- 1/4 cup grated parmesan cheese
- 1 tbsp butter
- fresh parsley for garnish
- Season the salmon:
Pat salmon cubes dry with a paper towel. Season with lemon pepper, paprika, and a light pinch of salt. - Sear the salmon:
Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
Add salmon bites (don’t overcrowd the pan). Sear 2–3 minutes per side until golden and just cooked through.
Remove salmon and set aside. - Make the sauce:
In the same skillet, reduce heat to medium. Add a small knob of butter and sauté garlic for about 30 seconds until fragrant.
Stir in chicken broth, lemon juice, and zest — scrape up any brown bits from the pan.
Pour in the cream and bring to a gentle simmer. Stir in Parmesan until melted and the sauce thickens slightly (2–3 minutes). - Combine:
Return the salmon bites to the skillet. Spoon the sauce over them and simmer for another minute so everything comes together. - Finish & serve:
Garnish with chopped parsley and a little extra lemon zest. Serve over rice, mashed potatoes, or pasta.
✨ Pro Tip: If you like a little heat, sprinkle in a pinch of crushed red pepper flakes or cayenne when making the sauce.
