Creamy Lemon Pepper Salmon Bites

  1. Season the salmon:
    Pat salmon cubes dry with a paper towel. Season with lemon pepper, paprika, and a light pinch of salt.
  2. Sear the salmon:
    Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
    Add salmon bites (don’t overcrowd the pan). Sear 2–3 minutes per side until golden and just cooked through.
    Remove salmon and set aside.
  3. Make the sauce:
    In the same skillet, reduce heat to medium. Add a small knob of butter and sauté garlic for about 30 seconds until fragrant.
    Stir in chicken broth, lemon juice, and zest — scrape up any brown bits from the pan.
    Pour in the cream and bring to a gentle simmer. Stir in Parmesan until melted and the sauce thickens slightly (2–3 minutes).
  4. Combine:
    Return the salmon bites to the skillet. Spoon the sauce over them and simmer for another minute so everything comes together.
  5. Finish & serve:
    Garnish with chopped parsley and a little extra lemon zest. Serve over rice, mashed potatoes, or pasta.

✨ Pro Tip: If you like a little heat, sprinkle in a pinch of crushed red pepper flakes or cayenne when making the sauce.
