These cheesy spicy nachos are the ultimate snack upgrade. Melty, tangy, and loaded with texture, they combine a creamy chili cheese sauce with fresh guac, zingy pickled onions, and crunchy nacho chips. They come together fast — perfect for sharing… or not.

Directions

  1. Add nachos to a lined tray and layer with beans.
  2. Bake at 200°C (392°F) for 5 minutes.
  3. In a small bowl, mash the avocado with the juice of half a lime, plus salt and pepper.
  4. In another bowl, melt The Laughing Cow Spicy Chilli cheese in the microwave for 30 seconds. Stir until smooth. (You can also melt it on the stove.)
  5. Drizzle the melted cheese sauce over the toasted nachos.
  6. Top with salsa, sour cream, guacamole, and pickled onions.
  7. Garnish with fresh coriander and serve immediately.
