Simple Cajun Chicken & Rice
Bold Cajun spice, juicy chicken, and flavorful rice all made in one pan. This dish hits hard and comes together fast—perfect for a quick dinner with a kick.
Ingredients:
- 1 lb boneless, skinless chicken thighs or breasts
- 2 tbsp Cajun seasoning (store-bought or homemade)
- 1 tbsp olive oil
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 1 cup long grain white rice
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Season chicken with Cajun seasoning and a pinch of salt and pepper. Set aside.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken for 3–4 minutes per side until browned. Remove and set aside.
- In the same skillet, reduce heat to medium and sauté diced onion and garlic until fragrant, about 2 minutes.
- Stir in the rice, letting it toast for 1–2 minutes. Pour in the chicken broth and bring to a boil.
- Return the chicken to the pan, reduce heat to low, cover, and simmer for 18–20 minutes or until the rice is tender and liquid is absorbed.
- Let sit covered for 5 minutes before serving. Garnish with fresh parsley or green onion if desired.
