Strawberry & Plum Shortbread Crumble
Ingredients:
Fruit Filling
- 2 Cup Strawberries (Hulled and halved)
- 2 Cup Plums (Pit and sliced )
- 1/2 Cup Granulated Sugar
- 2 Tbsp Brown Sugar
- 1 Tbsp Cornstarch
- 1 Tsp Vanilla extract
- 1 Tsp Lemon Juice
- 1/2 Tsp Cinnamon
Shortbread Crumble
- 1 Cup All Purpose Flour
- 1/2 Cup Granulated Sugar
- 1/2 Cup Unsalted Butter (Cold and cubed)
- small pinch Salt
To Serve
- scoop Vanilla Ice Cream (Haagen Dazs Vanilla Bean ice cream is the best)

Instructions
- Preheat oven to 350°F (175°C). Lightly butter a small baking dish (about 5×7 inches, loaf pan, or ramekins).
- Fruit filling: In a bowl, toss together strawberries, plums, sugars, cornstarch, vanilla, lemon juice, and cinnamon. Pour into the dish.
- Crumble topping: Mix flour, sugar, and salt. Cut in butter with fingertips until crumbly and coarse.
- Assemble: Sprinkle topping evenly over the fruit.
- Bake for 30–35 minutes, until golden brown on top and fruit is bubbling at the edges. You can also broil a little on top.
- Serve warm with ice cream on top.
