Strawberry & Plum Shortbread Crumble

Instructions

  1. Preheat oven to 350°F (175°C). Lightly butter a small baking dish (about 5×7 inches, loaf pan, or ramekins).
  2. Fruit filling: In a bowl, toss together strawberries, plums, sugars, cornstarch, vanilla, lemon juice, and cinnamon. Pour into the dish.
  3. Crumble topping: Mix flour, sugar, and salt. Cut in butter with fingertips until crumbly and coarse.
  4. Assemble: Sprinkle topping evenly over the fruit.
  5. Bake for 30–35 minutes, until golden brown on top and fruit is bubbling at the edges. You can also broil a little on top.
  6. Serve warm with ice cream on top.
