Directions

  1. In a wide shallow bowl or baking dish, whisk together eggs, milk, and a pinch of salt until well combined. Line a plate with paper towels and set aside.
  2. Spread smooth peanut butter over 4 slices of Japanese-style milk bread, white sandwich bread, or brioche-style sandwich loaf, avoiding the very edges. Top with the remaining 4 slices to form sandwiches. Cut off the crusts and discard (or enjoy as a chef’s snack).
  3. Heat about ¼ inch of neutral oil in a large skillet over medium heat. To test the oil, drop a small amount of the egg mixture into the pan—it should bubble up and float immediately.
  4. Working in batches, dip each sandwich into the egg mixture, turning to coat all sides. Let any excess drip off, then immediately place the sandwich into the hot skillet.
  5. Fry until golden brown and crisp on the bottom, about 1 minute. Flip and continue cooking for another 1-2 minutes, carefully spooning hot oil over the tops and sides as the bottom browns. (If using thick-sliced bread, skip the basting and fry each short side as well.)
  6. Transfer the finished sandwiches to the paper towel-lined plate to drain any excess oil.
  7. Serve each sandwich topped with a pat of butter, a drizzle of sweetened condensed milk, and a sprinkle of flaky salt. Enjoy!
