Smash Burgers

Ingredients:
- 1/2 stick butter

Worcestershire Sauce
- 1/2 Tablespoon Fish Sauce
- 1 Teaspoon Kinders Woodfire Garlic
- 1 Pound Grass Fed Beef
- Sliced Cheese
- Brioche Buns
- salt (to season)
- pepper (to season)

Instructions:
1. Prepare the Meat Mixture:
- In a large bowl, combine the ground chuck, melted butter, Worcestershire sauce, fish sauce (TRUST ME!), and a generous amount of Kinder’s garlic smoke seasoning. Mix gently to avoid overworking the meat.
- Form the seasoned meat into balls weighing approximately 3 to 4 ounces each. Place them on a tray, cover with plastic wrap, and refrigerate for at least 30 minutes to ensure they are very cold.
2. Heat the Skillet:
- Place a cast iron skillet over high heat and allow it to become extremely hot. A properly heated skillet is essential for achieving the characteristic sear of a smash burger.
3. Cook the Burgers:
- Remove the chilled meat balls from the refrigerator and season them lightly with kosher salt and freshly ground black pepper.
- Place a few meat balls onto the hot skillet, ensuring there is enough space between them for smashing.
- After about 30 seconds, use a sturdy spatula or another heavy skillet to press each ball down firmly until it is very thin.
- Allow the patties to cook undisturbed for 3 to 4 minutes, or until the edges become crispy and browned.
4. Flip and Add Cheese:
- Carefully flip each patty and immediately place a slice of your chosen cheese on top.
- Continue cooking for an additional 1 to 2 minutes, or until the cheese has melted and the burger is cooked through.
5. Assemble the Burgers:
- Place each patty onto a buttered and toasted brioche bun.
- Add your preferred toppings and condiments.
6. Serve:
- Enjoy your smash burgers immediately while they’re hot and juicy.
