All you need is a microwave, a mini fridge, and a few easy-to-pack ingredients
Maple Bacon Sweet Potato Boats
Ingredients:
- 1 medium sweet potato
- 1 strip pre-cooked bacon
- 1 tbsp maple syrup
- 1 tsp butter
- Dash of cinnamon
Directions:
- Pierce sweet potato with a fork several times. Microwave on high for 5–6 minutes until soft.
- Let cool slightly, then slice open lengthwise.
- Add butter and a dash of cinnamon. Mash lightly with a fork inside the skin.
- Drizzle with maple syrup and top with chopped pre-cooked bacon.
