Instructions

  1. Shred your Costco rotisserie chicken and add it to a large bowl.
  2. Add the cooked rice (about 1½ cups).
  3. Pour the chicken juices from the rotisserie bag into the bowl this is where the flavor comes from.
  4. Add soy sauce, sesame oil, chili oil, chopped scallions, and cilantro. Add everything to your preference.
  5. Mix well until everything is evenly coated and warmed through.
  6. Top with fried shallots, fried garlic, extra scallions, and cilantro.
  7. Add more chili oil if you like, then enjoy.
