Viral Costco Chicken Scallion Rice (Bowl Method)

- Rotisserie Chicken (Shredded, (You can use how much you like))
- 1/2 Cup Rice (Cooked )
- Reserved chicken juices from the bag
- Soy Sauce (To Taste)
- Sesame Oil (To Taste)
- Chili Oil (To Taste)
- Scallions (To Taste )
- Cilantro (To Taste )
For Toppings
- Fresh Shallots
- Garlic (Fried)
- Extra Shallots
- Extra Cilantro
- More Chili Oil (Optional )
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Instructions
- Shred your Costco rotisserie chicken and add it to a large bowl.
- Add the cooked rice (about 1½ cups).
- Pour the chicken juices from the rotisserie bag into the bowl this is where the flavor comes from.
- Add soy sauce, sesame oil, chili oil, chopped scallions, and cilantro. Add everything to your preference.
- Mix well until everything is evenly coated and warmed through.
- Top with fried shallots, fried garlic, extra scallions, and cilantro.
- Add more chili oil if you like, then enjoy.
