Ultimate Bacon Thai Chili Cheeseburgers

- 4 slices red onion
- 4 tbsp Thai chili sauce
- 4 tbsp mayonnaise
- 4 brioche buns

Instructions
- Cook the Bacon: Heat a skillet over medium heat and cook the bacon until crispy, about 6–8 minutes. Drain on a paper towel-lined plate.
- Prepare the Patties: In a bowl, mix ground beef with garlic powder, smoked paprika, salt, and black pepper. Divide into four equal portions and shape into patties slightly larger than the buns. Press a small indent into the center of each patty with your thumb.
- Cook the Burgers: Grill or cook patties in a skillet over medium-high heat for 3–4 minutes per side (medium doneness). Add a slice of cheddar cheese to each patty in the last minute of cooking, covering to melt. Rest for 5 minutes.
- Toast the Buns: Spread butter on the cut sides of the brioche buns. Toast on a skillet or grill until golden brown, about 1–2 minutes.
- Cheese-Fuse the Buns: Melt a slice of cheddar cheese in a skillet until slightly bubbly, then press the toasted side of a bun onto the cheese. Repeat with remaining buns.
