Mediterranean Meatballs with Rice and Cucumber Salad
Ingredients:
Meatballs
- 1 lb ground turkey (93% lean)
- 1 egg
- 1/2 cup panko breadcrumbs
- 2 cloves garlic (minced)
- salt
- black pepper
Feta Sauce
- 1/2 cup crumble feta
- 1/2 cup plain Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic (minced)
cucumber salad
- 1 english cucumber (diced)
- 1/4 cup red onion (diced)
- 2 tbsp lemon juice
- 1 tsp evoo (a good kind)
- fresh parsley
- salt
- black pepper
for serving
- basmati rice (cooked)

Instructions
- Make the Meatballs:
- In a bowl, mix ground turkey, egg, panko, garlic, parsley, olive oil, salt, and pepper.
- Roll into meatballs.
- Heat a little olive oil in a skillet, sear on all sides, then cover and cook through (about 12–15 min).
- Make the Feta Sauce:
- Blend or whisk together feta, Greek yogurt, olive oil, lemon juice, and garlic until smooth.
- Make the Cucumber Salad:
- Toss cucumbers and red onion with lemon juice, olive oil, herbs, salt, and pepper. Let sit 10 minutes.
- Assemble:
- Spoon rice onto plates.
- Top with turkey meatballs.
- Drizzle with feta sauce.
- Serve cucumber salad on the side.
