Instructions

  1. Make the Meatballs:
    • In a bowl, mix ground turkey, egg, panko, garlic, parsley, olive oil, salt, and pepper.
    • Roll into meatballs.
    • Heat a little olive oil in a skillet, sear on all sides, then cover and cook through (about 12–15 min).
  2. Make the Feta Sauce:
    • Blend or whisk together feta, Greek yogurt, olive oil, lemon juice, and garlic until smooth.
  3. Make the Cucumber Salad:
    • Toss cucumbers and red onion with lemon juice, olive oil, herbs, salt, and pepper. Let sit 10 minutes.
  4. Assemble:
    • Spoon rice onto plates.
    • Top with turkey meatballs.
    • Drizzle with feta sauce.
    • Serve cucumber salad on the side.
