This elegant Tomato & Dill Poached Halibut is a nourishing, one-pan meal that pairs flaky, tender halibut with aromatic leeks, garlic, lemon, and juicy tomatoes. Serve with crusty bread, rice, or your favorite greens for a light and satisfying dinner.

- Heat avocado oil in a large skillet over medium heat. Add leeks, garlic, and cherry tomatoes. Sauté for a few minutes until fragrant and softened.
- Stir in lemon juice, fish sauce, and butter. Let the sauce gently bubble.
- Add the halibut fillet to the pan and lower the heat to a gentle simmer. Poach for 3 minutes, then turn off the heat.
- Cover the pan and let the fish sit in the hot broth for 10 minutes, or until cooked through and flaky.
- Serve warm over rice, greens, or with a slice of crusty bread. Enjoy!
