This Thai Basil Shrimp Fried Rice is bold, spicy, and fragrant, loaded with fresh basil, garlic, and chili heat for a quick, flavorful dinner.

  1. In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, pepper, and sugar. Set aside.
  2. Cut the stems off the Thai chilis and mash them together with the garlic to make a paste. Set aside.
  3. Slice the onion and pluck the Thai basil leaves from their stems.
  4. Heat oil in a pan or wok over medium-high heat. Add the chili-garlic paste and onions. Sauté for 15 seconds.
  5. Add the shrimp and cook until pink, then push to one side of the pan.
  6. Crack in the eggs and scramble until fully cooked.
  7. Add the day-old rice and pour in the prepared sauce. Stir-fry until the sauce is fully absorbed and rice is hot.
  8. Taste and adjust seasoning if needed. Stir in the Thai basil and cook until just wilted.
  9. Plate and serve hot. Enjoy!
