Name: Bean Salad
Ingredients: 1 15.5 oz can dark red kidney beans (drained and rinsed); 1 15.5 oz can white beans (drained and rinsed); 1 15.5 oz can chickpeas (drained and rinsed); 1 cup marinated artichoke hearts (drained and chopped); 1/2 cup oil-packed sun-dried tomatoes (drained and sliced); 1 whole mini cucumbers (sliced); 1/2 cup feta (crumbled, or grated parmesan); 1/2 cup fresh parsley (chopped); 1/2 cup fresh basil (chopped); 1/3 cup extra virgin olive oil; 3 tbsp red wine vinegar; 1 tbsp lemon (juiced); 2 tsp shallot (minced); 2 tsp honey; 1 1/2 tsp Dijon mustard; 1/2 tsp coarse kosher salt; 1/2 tsp dried oregano; black pepper (to taste)
