
Savory Tomato Shrub (non alcoholic)
Servings: 2 cups
Ingredients:
Original recipe (1X) yields 2 servings.
- 1 cup cherry tomatoes (or chopped vine tomatoes)
- 1/2 cup apple cider vinegar (or white wine vinegar)
- 1/4 cup balsamic vinegar (optional for depth)
- 2 tbsp sugar or honey (adjust to taste)
- 1/2 tsp sea salt
- 1 clove garlic (crushed (optional) )
- 1 spig fresh thyme or rosemary

Think Bloody Mary vibes without alcohol — herbaceous and bold.
Instructions:

Muddle or mash the tomatoes in a bowl or jar until juicy.

Add the vinegars, sugar, salt, garlic, and herbs. Stir well.

Cover and let it infuse in the fridge for 24–72 hours, stirring once or twice a day.

Strain the mixture through a fine mesh sieve or cheesecloth into a clean jar or bottle.

Store in the refrigerator for up to 2 weeks.
🥂 To Serve (Shrub Mocktail):

1 oz tomato shrub

3–4 oz sparkling water or tonic

Ice, celery or herb garnish (e.g., thyme or basil)
Optional: Add a splash of pickle brine or hot sauce for a bold, Bloody Mary–style kick.
