Ice Cream Strawberry Bars
Ingredients:
- 12-15 Golden Oreos (I used 2 packs. Itu2019s just depending on how big your pan is. )
- 1-2 Cups Tillamook ice cream (softened slightly)
- 2 Oz Dried Strawberries (I used half for the crust and half for the topping)
- 2 to 3 Tablespoon Melted Butter
- Make the Oreo-Strawberry Base:
- In a food processor or blender, combine Oreos and some of the dried strawberries. Pulse until coarse crumbs form.
- Add melted butter and pulse a few more times until the mixture sticks together slightly.
- Assemble the Sandwiches:
- Press a layer of the Oreo-strawberry mixture into the bottom (line the bottom of your pan with parchment paper) of a pan or mold to form the base.
- Add a layer of softened ice cream on top, spreading evenly.
- Add Crunch Topping:
- In a ziplock bag, combine more Oreos and 1/2 dried strawberries. Mash them lightly to create crumbles. Sprinkle over the top of your sandwiches for texture.
- Freeze:
- Place in the freezer for at least 2–3 hours, or until firm.
- Serve:
- Slice into individual sandwiches or bars. Tip: grab extra Oreos and dried strawberries if you want a bigger batch — this recipe is worth it!
