Directions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season lamb with salt and pepper, then sear for 3-4 minutes per side.
  3. In a small bowl, mix honey, balsamic vinegar, and garlic. Pour over lamb chops and cook for an additional 2-3 minutes, glazing the meat.
  4. Boil potatoes until tender, about 10-15 minutes. Drain and mash with heavy cream, butter, salt, and pepper.
  5. Serve lamb chops with creamy mashed potatoes. Enjoy!
