Ground Beef Sweet Potato Bowl

October 14, 2026

I love putting together a bowl that has a little bit of everything. For this one, I’m using roasted sweet potatoes, seasoned ground beef, a fresh tomato and onion mixture, cheese, and a creamy honey-mustard-lime sauce. Every bite brings together something savory, sweet, fresh, and tangy.

Directions

  1. Preheat the oven to 400°F. Cut the sweet potatoes into cubes, season with salt, black pepper, garlic powder, and onion powder, and spread them on a baking sheet. Roast for approximately 25 minutes, or until tender.
  2. While the potatoes roast, cook the ground beef in a skillet with salt, black pepper, garlic powder, and onion powder until browned and fully cooked.
  3. In a separate bowl, combine the diced tomato, chopped onion, dried Italian seasoning, a little salt, and lime juice. Stir together.
  4. Make the sauce by whisking together 4 tablespoons mayonnaise, 4 tablespoons sour cream, 4 tablespoons mustard, 4 tablespoons honey, and 4 tablespoons lime juice until smooth.
  5. Divide the roasted sweet potatoes among bowls. Add the seasoned ground beef and tomato-onion mixture.
  6. Top with cheese, drizzle with the prepared sauce, and finish with parsley if desired. Serve warm.

My Tip:
Cut the sweet potatoes into similar-sized pieces so they roast evenly. I like keeping the sauce separate until I’m ready to eat so I can add as much as I want.
