Directions

  1. Use kitchen shears to cut the lobster tails down the center of the shell, then use a knife to slice into the meat without cutting all the way through.
  2. Carefully separate the meat from the shell and lift it slightly so it sits on top of the shell.
  3. Drizzle with olive oil and season the meat generously with salt, pepper, and Cajun seasoning.
  4. Preheat your grill to medium-high heat.
  5. Place the lobster tails meat side down directly on the grill and cook for about 4–5 minutes to achieve a nice char.
  6. Flip the tails shell side down and place a piece of foil underneath to prevent flare-ups.
  7. In a small saucepan, melt butter over low heat and stir in minced garlic, parsley, Old Bay seasoning, and more Cajun seasoning to make the Cajun butter.
  8. Baste the lobster tails generously with the Cajun butter and continue grilling for another 4–6 minutes, or until the meat is opaque and cooked through.
  9. Serve hot, drizzled with any extra Cajun butter and garnished with chopped parsley if desired.
