Ingredients:

- 1 tbsp olive oil

- 1 tbsp Dijon mustard
- 1/2 cup beef broth ((or chicken broth))
- 1/2 cup shredded (or Swiss cheese)
- 1/2 cup shredded mozzarella
- 1-2 tbsp white wine (for extra depth)

Instructions
1. Season the chicken. Pat chicken dry and season with salt and pepper on both sides.
2. Sear. Heat olive oil in a skillet over medium-high and sear chicken 3–4 minutes per side until lightly golden. Remove and set aside.
3. Caramelize the onions. In the same pan, melt butter. Add sliced onions with a pinch of salt. Cook 12–15 minutes, stirring often, until deep golden and jammy.
4. Add flavor. Stir in garlic, thyme, and Dijon. Cook 1 minute.
5. Deglaze. Pour in broth (and wine if using). Stir to scrape up all browned bits. Let simmer 2–3 minutes to thicken slightly.
6. Assemble. Place chicken in a baking dish. Pour the onion mixture over top.
7. Cheese it. Sprinkle Gruyère and mozzarella all over the chicken.
8. Bake. Bake at 400°F for 20–25 minutes, or until chicken is cooked through and cheese is bubbly and golden.
9. Rest + serve. Let rest 5 minutes before serving so the sauce thickens beautifully.
