Easy Peasy Sweet Potato Bowl

2 teaspoons olive oil

2 medium sweet potatoes, peeled and diced small

1 teaspoon salt

1 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon ground cumin

1/4 teaspoon garlic powder

1/4 cup water or vegetable broth

1 (14.5 oz.) can black beans, rinsed and drained

6 oz. spinach


  1. Heat oil in large skillet over medium heat.
  2. Add sweet potatoes and sauté for 2-3 minutes.
  3. Add the spices and water or broth. Stir to combine.
  4. Cover the skillet and cook over medium-low for 15 minutes or until sweet potatoes are tender.
  5. Add the black beans and spinach. Stir until combined and spinach is wilted (about 2-3 minutes).
  6. Serve hot.
