This creamy and crunchy Cucumber Radish Salad is the perfect refreshing dish for warm days. Layered over a garlicky yogurt base, it’s simple, vibrant, and full of flavor, a beautiful balance of tangy, herby, and cool.

- Chop your cucumber into bite-sized pieces, roughly cut for varied shapes.
- Thinly slice the radishes and red onion, then add to a large bowl with the cucumber.
- Mince fresh parsley and add it to the bowl.
- Add a generous pinch of salt and a squeeze of lemon juice from one wedge. Mix well and set aside.
- Mince your garlic finely. In a separate small bowl, combine yogurt, garlic, another squeeze of lemon juice, and a pinch of salt. Mix until smooth.
- If not serving immediately, refrigerate both the vegetables and yogurt sauce until ready to assemble.
- When ready to serve, spread the yogurt mixture on a large flat plate.
- Drain any excess liquid from the vegetable bowl, drizzle with olive oil, mix, and adjust salt or lemon as needed.
- Spoon the dressed vegetables over the yogurt plate and drizzle with more olive oil to finish. Serve immediately.
