This creamy and crunchy Cucumber Radish Salad is the perfect refreshing dish for warm days. Layered over a garlicky yogurt base, it’s simple, vibrant, and full of flavor, a beautiful balance of tangy, herby, and cool.

Directions

  1. Chop your cucumber into bite-sized pieces, roughly cut for varied shapes.
  2. Thinly slice the radishes and red onion, then add to a large bowl with the cucumber.
  3. Mince fresh parsley and add it to the bowl.
  4. Add a generous pinch of salt and a squeeze of lemon juice from one wedge. Mix well and set aside.
  5. Mince your garlic finely. In a separate small bowl, combine yogurt, garlic, another squeeze of lemon juice, and a pinch of salt. Mix until smooth.
  6. If not serving immediately, refrigerate both the vegetables and yogurt sauce until ready to assemble.
  7. When ready to serve, spread the yogurt mixture on a large flat plate.
  8. Drain any excess liquid from the vegetable bowl, drizzle with olive oil, mix, and adjust salt or lemon as needed.
  9. Spoon the dressed vegetables over the yogurt plate and drizzle with more olive oil to finish. Serve immediately.
