Creamy Spinach & Artichoke Chicken

Ingredients:
- 4 chicken breasts breasts) ((about 4 medium breasts))
- garlic (2 cloves)
- spinach ((about half a standard bag))
- 1 lemon
- 1 can artichoke ((canned or jarred) - drained & chopped)
- 3/4 cup chicken broth
- 1/2 block cream cheese (Cream cheese OR Greek yogurt (1/2 block or or 1/2 cup yogurt))
- 1/2 cup parmesan cheese
- 1 tbsp olive oil
- salt & black pepper ((as needed))
- 1/2 tsp red pepper flakes

Instructions
1. Prep the chicken. Season chicken breasts with salt and pepper on both sides. Sear. Heat olive oil in a skillet over medium-high.
2. Sear the chicken 3–4 minutes per side until lightly golden. Remove and set aside.
3. Start the sauce. In the same pan, add garlic and sauté 1 minute until fragrant.
4. Build flavor. Add artichoke hearts, chicken broth, cream cheese (or yogurt), and Parmesan. Stir until creamy and smooth.
5. Add spinach. Fold in spinach until wilted (or warmed through, if using frozen).
6. Season. Add lemon juice, red pepper flakes, salt, and pepper. Simmer 2–3 minutes to thicken.
7. Return the chicken. Nestle chicken back into the sauce. Spoon sauce over the tops.
8. Finish. Let simmer on low 10–12 minutes or until chicken is cooked through and sauce is silky.
9. Serve. Plate with extra spoonfuls of the creamy sauce — the best part.
