Cinnamon Roll Pancakes

  1. Make Cinnamon Swirl
    • Mix melted butter, brown sugar, and cinnamon in a small bowl.
    • Transfer to a piping bag or zip-top bag (snip off a tiny corner). Set aside.
  2. Make Pancake Batter
    • In one bowl, whisk flour, sugar, baking powder, and salt.
    • In another bowl, whisk milk, egg, melted butter, and vanilla.
    • Combine wet and dry ingredients, mixing until just combined (don’t overmix).
  3. Cook Pancakes
    • Heat a nonstick skillet or griddle over medium-low and grease lightly.
    • Pour ¼ cup of batter for each pancake.
    • When bubbles start forming on top, swirl the cinnamon mixture onto the pancake in a spiral.
    • Cook until edges look set, then carefully flip and cook another 1–2 minutes.
  4. Make Glaze
    • Beat cream cheese and butter until smooth.
    • Mix in powdered sugar, vanilla, and milk until pourable.
  5. Assemble & Serve
    • Stack pancakes, drizzle with cream cheese glaze, and enjoy warm!

✨ Tip: Keep the heat on medium-low so the cinnamon swirl doesn’t burn.
