Cinnamon Roll Pancakes
Ingredients:
Cinnamon Swirl
- 4 Tbsp unsalted butter
- 1/4 Cup brown sugar
- 1/2 Tbsp ground cinnamon
Pancakes
- 1 Cup all-purpose flour
- 2 Tbsp sugar
- 2 Tsp baking powder
- 1/4 Tsp salt
- 1 Cup milk
- 1 large egg
- 2 Tbsp melted butter
- 1 Tsp vanilla extract
Cream Cheese Glaze
- 2 Oz cream cheese
- 2 Tbsp unsalted butter
- 1/2 Cup powdered sugar
- 1/2 Tsp vanilla extract
- 2-3 Tsp milk (to thin)
- Make Cinnamon Swirl
- Mix melted butter, brown sugar, and cinnamon in a small bowl.
- Transfer to a piping bag or zip-top bag (snip off a tiny corner). Set aside.
- Make Pancake Batter
- In one bowl, whisk flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients, mixing until just combined (don’t overmix).
- Cook Pancakes
- Heat a nonstick skillet or griddle over medium-low and grease lightly.
- Pour ¼ cup of batter for each pancake.
- When bubbles start forming on top, swirl the cinnamon mixture onto the pancake in a spiral.
- Cook until edges look set, then carefully flip and cook another 1–2 minutes.
- Make Glaze
- Beat cream cheese and butter until smooth.
- Mix in powdered sugar, vanilla, and milk until pourable.
- Assemble & Serve
- Stack pancakes, drizzle with cream cheese glaze, and enjoy warm!
✨ Tip: Keep the heat on medium-low so the cinnamon swirl doesn’t burn.
