Cheesy Meatball Bread Boats

October 14, 2026

If you’re in the mood for a meatball sub with plenty of melted cheese, you’ve got to try these bread boats. I fill Italian bread with homemade meatballs simmered in marinara, sautéed onions and peppers, then finish everything with mozzarella and provolone. A little garlic butter on the bread brings it all together.

Directions

  1. In a large bowl, combine 1 lb ground beef, breadcrumbs, 1 egg, and your meatball seasonings. Mix until combined, then shape into meatballs about the size of golf balls.
  2. Add a little olive oil to a skillet. Sauté the onion and bell peppers until softened, then remove them from the skillet.
  3. Add the meatballs to the skillet and brown them on the outside.
  4. Return the onions and peppers to the skillet and add the marinara sauce. Cover and simmer over low heat for approximately 10 minutes, or until the meatballs are cooked through and reach an internal temperature of 160°F.
  5. Preheat the oven to 400°F. Cut open the Italian bread and remove some of the soft center to make room for the filling.
  6. Spread garlic butter inside the bread. Fill with the meatballs, marinara, onions, and peppers.
  7. Top with mozzarella and provolone. Finish with parsley and a drizzle of olive oil.
  8. Bake for approximately 10 minutes, until the cheese has melted and the bread is warm and lightly toasted. Serve warm.

My Tip:
Don’t remove too much of the bread when making your boats. Leave enough around the edges to hold the meatballs, sauce, and melted cheese without everything spilling out.
