Instructions

  1. Heat olive oil or bacon fat in a large skillet or Dutch oven over medium heat.
  2. Add diced onions and sauté for about 3–4 minutes, until softened and translucent.
  3. Stir in minced garlic and smoked paprika; cook for another 1 minute until fragrant.
  4. Add the chopped cabbage and collard greens to the pan, stirring to combine with the aromatics.
  5. Season with salt, black pepper, and red pepper flakes (if using).
  6. Pour in the broth, cover the pan, and reduce heat to low. Let the greens steam and cook for 15–20 minutes, stirring occasionally, until tender.
  7. Uncover, add apple cider vinegar, and stir well to combine. Cook uncovered for another 2–3 minutes to let the liquid reduce slightly.
  8. Adjust seasoning to taste and serve warm as a hearty side dish or main vegetable.
