This simple yet flavorful Cabbage Collards recipe brings together two classic greens for a nutritious, savory side dish that complements any meal. Tender, seasoned, and full of soul, it’s comfort food at its best.
Ingredients:
- 1 medium head of cabbage, chopped
- 1 bunch of collard greens, stems removed and chopped
- 3 tablespoons olive oil or bacon fat
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
- 0.5 cup vegetable or chicken broth
- 1 tablespoon apple cider vinegar
Instructions
- Heat olive oil or bacon fat in a large skillet or Dutch oven over medium heat.
- Add diced onions and sauté for about 3–4 minutes, until softened and translucent.
- Stir in minced garlic and smoked paprika; cook for another 1 minute until fragrant.
- Add the chopped cabbage and collard greens to the pan, stirring to combine with the aromatics.
- Season with salt, black pepper, and red pepper flakes (if using).
- Pour in the broth, cover the pan, and reduce heat to low. Let the greens steam and cook for 15–20 minutes, stirring occasionally, until tender.
- Uncover, add apple cider vinegar, and stir well to combine. Cook uncovered for another 2–3 minutes to let the liquid reduce slightly.
- Adjust seasoning to taste and serve warm as a hearty side dish or main vegetable.
