These Sweet and Smoky Salmon Bowls with Cilantro Lime Rice are the perfect blend of bold flavors and nourishing ingredients. The maple-glazed salmon pairs beautifully with zesty cilantro lime rice, black beans, and creamy avocado, a feel-good dinner you’ll want on repeat.

Directions
- Preheat your oven to 375°F.
- In a medium saucepan, add rice and water. Bring to a boil, reduce to a simmer, cover, and cook for about 20 minutes or until the liquid is mostly absorbed.
- Set the rice aside and let rest for 5 minutes.
- In a greased 9×9 baking dish, place your salmon fillets skin-side down. Drizzle with about 1 tsp of avocado oil.
- Season with salt, pepper, and your favorite spice blend, then drizzle with maple syrup. Rub in with your hands or a spoon.
- Bake the salmon for 20 minutes.
- Fluff the rice with a fork and stir in olive oil, lime juice, and chopped cilantro. Season with salt and pepper to taste.
- Assemble your bowls with scoops of cilantro lime rice, a serving of baked salmon, black beans, pickled red onions, avocado slices, and more fresh cilantro.
