15-Minute Honey Lemon Thyme Salmon

Prep salmon: Pat 2 salmon fillets dry with paper towels. Season both sides generously with salt and pepper. Set aside while you make the sauce.

Make the sauce: In a small bowl, whisk together 2 tbsp honey, juice of ½ lemon (about 2 tbsp), and 1 tsp fresh thyme leaves (or ½ tsp dried thyme). If using garlic, add 1 minced clove.

Cook salmon: Heat 1 tbsp oil in a non-stick skillet over medium-high heat. Place salmon fillets skin-side down (if skin on) and cook for 4-5 minutes until skin is crispy and salmon is cooked halfway up the sides.

Add sauce and finish: Flip salmon and cook 2 more minutes. Pour honey-lemon sauce over salmon and cook for 1-2 minutes, spooning sauce over fillets until glaze thickens and salmon flakes easily with a fork.

Serve: Remove from heat. Squeeze remaining lemon half over salmon. Garnish with extra thyme if available. Serve immediately with rice, roasted potatoes, or steamed vegetables.
