Weeknight BBQ Chicken Pizza
Ingredients:
- 2 flatbread (Store Bought)
- 1 cup Rotisserie Chicken
- 1/2 cup BBQ Sauce
- 1 1/2 cup Mozzarella Cheese (Shredded)
- 1/4 cup red onion (Thinly sliced)
- 1/4 Fresh Cilantro (Chopped )
- Olive Oil (for Brushing)

Instructions:
- Preheat oven to 400°F (or 425°F if you like it extra crispy).
- Prepare chicken: In a bowl, toss the cooked chicken with 2–3 tablespoons of BBQ sauce to coat.
- Assemble the flatbread:
- Place the flatbreads on a parchment-lined baking sheet.
- Lightly brush with olive oil.
- Spread a layer of BBQ sauce on each flatbread (about 2–3 tablespoons).
- Sprinkle with shredded mozzarella.
- Add the BBQ chicken evenly across each flatbread.
- Top with red onions.
- Bake for 10–12 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
- Finish: Remove from oven, sprinkle with fresh cilantro, and slice.
