Why These Chicken & Waffle Skewers Are A Fun Lunch Box Hit

Pack lunch with me for my fourth grader! Since my brand new middle schooler suddenly thinks he’s too cool for a lunch from home, I’m focusing on something fun and delicious. Chicken and waffle skewers are a creative twist on a classic combo—and the trick to keeping them from getting soggy is to crisp up the chicken extra and add a paper towel right underneath. Add some fruit and a sweet treat, and lunch is done!

Directions

  1. Prep the chicken: Cook the chicken nuggets or tenders according to package instructions. For extra crispiness, cook them a little longer than the package recommends.
  2. Toast the waffles: Toast the waffles until golden and crisp. Let them cool slightly.
  3. Assemble the skewers: Cut the waffles into bite-sized pieces. Thread alternating pieces of chicken and waffle onto skewers.
  4. Pack to prevent sogginess: Place a paper towel underneath the skewers in the lunch box to absorb any moisture. Add syrup to a squeezable pouch for dipping.
  5. Add fruit: Pack mandarin oranges and grapes in a separate container.
  6. Include a treat: Add Oreos for dessert.

Pro Tips

  • Keep it crispy: The trick to keeping it from getting soggy is to crisp up the chicken a little extra than you normally would and add a paper towel right underneath.
  • Thermos alternative: To keep them warm, put them in a thermos—but if your kids insist on skewers, just pack them as is!
  • Syrup on the go: Use a squeezable pouch for syrup to make it mess-free and easy for kids to use.
  • Involve your kids: If your kids don’t like peanut butter and jelly, sit down together and brainstorm new lunch ideas they’ll love.
