Name: Creamy Bolognese
Ingredients: 6 tbsp olive oil (divided); 2 large carrots (peeled and diced); 2 stalks of celery (diced); 1 medium onion (diced); 1 tsp salt and cracked black pepper (to taste); 1 tsp crushed red pepper flakes (to taste); 6 cloves garlic (chopped); 6 oz can tomato paste; 1.5 lbs ground beef; 1 lb ground pork; 1 cup cabernet; 28 oz cab whole peeled tomatoes; 1 cup water (divided); 24 oz jar passata; 1 pinch sugar; 2 oz hunk of pecorino romano; 1 lb pappardelle or fettuccini nest (or any pasta you want); 3/4 cup heavy cream (optional); 15 fresh basil leaves (ripped up); 1/4 cup grated pecorino romano (for garnish)
