Ingredients: 1 lb ground beef (85/15 or leaner); 1 tbsp olive oil or butter; 1 small yellow onion (finely diced); 3 garlic cloves (minced); 8 oz cremini mushrooms (sliced); 2 tbsp flour; 2 tbsp tomato paste; 1 tbsp Worcestershire sauce; 1 tsp soy sauce; 1/2 tsp dried thyme; 1/2 tsp paprika; Salt & freshly cracked black pepper (to taste); 1 3/4 cups beef broth (low sodium); 1/4 cup heavy cream or sour cream (optional)
