Caramel Apple Mimosa
Perfect for this time of year!
Ingredients:
2 Tbsp. caramel
2 Tbsp. cinnamon sugar
1 c. apple cider
8 oz. caramel vodka
1 750-ml bottle bubbly
Apple slices, for garnish
Directions:
Step 1: Pour caramel into a small dish. Pour cinnamon sugar into another small dish. Dip champagne flutes into caramel to rim glass, then dip in cinnamon sugar until coated.
Step 2: Pour 1/4 cup apple cider and 2 ounces caramel vodka into each flute and top with bubbly.
Step 3: Garnish with an apple slice before serving.

PREPARE THE GROUND BEEF:
- In a large skillet over medium heat, heat olive oil. Add ground beef and cook until browned, breaking it up as it cooks.
- Add minced garlic, chili powder, coriander, salt, smoked paprika, cumin, oregano, black pepper, and onion powder. Stir well to combine.
- Pour in tomato sauce and beef broth. Let the mixture simmer until the flavors meld and the sauce thickens slightly.
- Stir in finely chopped cilantro, then remove from heat and set aside.
MAKE THE CHIPOTLE SAUCE:
- In a small bowl, mix mayonnaise, lime juice, honey, chili powder, and adobo paste. Stir until smooth and well combined.
ASSEMBLE THE SALAD:
- In a large salad bowl, layer chopped romaine lettuce as the base.
- Spoon the prepared ground beef mixture over the salad.
- Sprinkle shredded cheese on top.
- Evenly distribute diced tomatoes and avocado over the lettuce.
- Drizzle the chipotle sauce generously over the salad.
- Add dollops of sour cream throughout the salad.
- Sprinkle crushed tortilla chips over the top. You can also serve whole tortilla chips on the side.
- Garnish with chopped cilantro if desired. Enjoy!
Easy Ceviche
Ingredients:
2lbs of Deveined Raw Shrimp
1 1/2 Cup of (Fresh) Lime Juice
1 Red Onion chopped
4 Roma Tomatoes chopped
2 Deseeded Jalapeños chopped
1 Bunch of Cilantro
1 English cucumber chopped (I like the cucumbers with no seeds)
2 Avocados chopped
Salt
Pepper
How to Make Easy Ceviche

Rinse shrimp completely (this is very important) and dry.

Once your shrimp is dry chop your shrimp up. Add your chopped shrimp and lime juice into a glass or a non-radioactive bowl with a lid for 2 to 3 hours. Until shrimp is opaque.

While the shrimp is in the lime juice chop up all the other ingredients.

Once shrimp is done in the lime juice remove some of the lime juice. You don’t want too much left in it. Then add all your chopped ingredients, and season with salt to your liking. Enjoy!

1.5 Tbsp butter or ghee

1/2 tsp salt or to taste
1/4 tsp black pepper or to taste
Lemon Sauce:
2 oz butter 1/4 cup, unsalted
2 Tbsp lemon juice from 1/2 large lemon
1/2 tsp salt
1/4 tsp black pepper

- Pat the sea bass fillets dry with paper towels and season both sides with salt and pepper.
- Heat the butter and oil in a large skillet/frying pan (or well-seasoned cast iron skillet) over medium-high heat. Once hot, add the fillets skin-side-down and pan-sear for 3-4 minutes per side (depending on the thickness). Very thick fillets over an inch can take 5 minutes per side. If it sticks when you try to flip it, it's not ready. Leave it for a further 10-15 seconds and try again. To ensure the fillets are properly cooked, use a thermometer to check that the internal temperature is 140-145ºF/60-63ºC.
- Meanwhile, while the fish cooks (or beforehand), prepare the simple lemon sauce by melting the butter in a small saucepan over medium-low heat until lightly browned. Then mix in the lemon juice, salt, and pepper.
- When everything is ready, spoon the lemon butter sauce over the seared sea bass, and enjoy!

Instructions:
1. Place the popcorn in the microwave or popcorn maker.
2. Press the popcorn button on the microwave, and immediately remove package from microwave and vigorously shake!
3. Open the bag and poor a nice full bowl, but not too much.
4. Break See’s Peanut Brittle into pieces and add to the bowl of popcorn.
For this recipe, You can only use See’s candies Peanut Brittle because nothing taste like See’s candies.
