Directions
- Prep the Spam: Cut the Spam into slices about ½-inch thick.
- Fry the Spam: Heat a pan over medium heat. Fry the Spam slices until they’re golden brown on both sides.
- Make the sauce: In a small bowl, mix together 1 spoonful soy sauce, 1 spoonful mirin, and 2 spoons sugar. Pour over the fried Spam and let it caramelize slightly.
- Prepare the nori: Cut your nori sheets into strips about 2 inches wide.
- Assemble the musubi: Place a strip of nori on a flat surface. Add a layer of sushi rice in the center (using a mold or just pressing down with something flat). Top with a slice of the glazed Spam. Fold the nori over to wrap it all together. Repeat with remaining ingredients.
- Pack the lunch box: Place the musubi in your lunch box. Add peaches, green apple slices for tartness, and Goldfish crackers for crunch.
- Keep it fresh: For food safety, keep an ice pack on the lunch box to keep everything fresh until lunchtime.
Pro Tips
- No mold? No problem: You don’t need a mold to make this. Just press the rice down with anything flat—a spatula or the back of a spoon works great.
- Kid-friendly sides: Let your kids help choose their favorite fruits and crunchy snacks to pack alongside.
- Safety first: Always use an ice pack in lunch boxes to keep perishable items safe to eat.
- Get creative: Swap Spam for grilled chicken, tofu, or your favorite protein for variety.
- Try it yourself: Josephine eats the same thing with her kids for lunch to see how it tastes—great way to know if your kids will like it!
