
Roasted Chicken with an Apricot and Balsamic Glaze

Ingredients:
- 2.5 lbs chicken breasts (bone-in, skin-on or boneless)
- 0.5 cup apricot jam
- 2 tbsp high-quality balsamic vinegar
- 2 tbsp grain mustard
- 2 tbsp olive oil, plus extra for greasing
- 2 tbsp fresh rosemary, chopped
- 1.5 tsp salt
- 0.5 tsp black pepper
Instructions
- ◊ Preheat oven: Set to 400°F (200°C). Lightly grease a baking dish or tray with olive oil.
- ◊ Make the glaze: In a bowl, mix together apricot jam, balsamic vinegar, grain mustard, olive oil, and rosemary.
- ◊ Season the chicken: Pat chicken dry and season both sides with salt and pepper.
- ◊ Glaze and roast: Place chicken in the pan and spoon or brush half the glaze over the top. Roast for 25 minutes.
- ◊ Glaze again: Remove chicken briefly, baste with remaining glaze, then return to oven for another 15–20 minutes until golden and cooked through.
- ◊ Serve: Let rest for 5 minutes. Spoon pan juices over before serving with a side of greens or roasted veggies.
