About 15 Minutes Prep  •  35 Minutes Bake Time  •  Meal Train Friendly  •  Easy to Double

Meal Train Tip: Ashley uses a disposable aluminum pan so the new mom doesn’t have to worry about returning a casserole dish. She also suggests making a double batch so you can prepare dinner for your own family at the same time.

Directions

  1. Heat a small amount of olive oil in a large skillet over medium heat.
  2. Add the ground beef and sauté until completely browned and cooked through.
  3. Add both packets of taco seasoning and stir until the beef is evenly seasoned.
  4. Add your favorite salsa and stir until thoroughly combined with the beef. The mixture should be thick and saucy.
  5. Spoon a layer of the beef mixture across the bottom of a baking dish or disposable aluminum pan.
  6. Add a layer of tortillas over the beef.
  7. Sprinkle shredded cheese over the tortillas.
  8. Continue layering the beef mixture, tortillas, and cheese until the pan is filled, finishing with cheese on top.
  9. Cover the casserole tightly with aluminum foil. If you’re delivering it as a meal-train dinner, attach the baking instructions to the pan so the recipient knows exactly how to prepare it.
  10. Bake covered at 400°F for 30 minutes.
  11. Remove the foil and bake uncovered for another 5 minutes.
  12. Serve with sour cream and your preferred sides, if desired.
