Inspired by the iconic Nobu dish, this Miso Salmon is rich, buttery, and infused with sweet‑savory umami from a simple miso marinade. The result? Melt‑in‑your‑mouth fish with a beautifully caramelized glaze you’ll crave again and again.

In a pan, boil the mirin and sake for 3 minutes.

Add in sugar and miso and continue to cook a couple more minutes without boiling. Let it cool.

In a dish, add your salmon and pour your marinade all over your fish, coating it very well. Then, cover it VERY tightly and marinate for 24 hours in the fridge.

Cover a baking sheet with aluminum foil and add your marinated salmon. Broil it until done, for me this was about 7 minutes, but very oven is different so keep an eye out. Then internal temperature should be 145℉ and your salmon should flake easily with a fork.
