Directions

  1. Heat a stainless clad pan over medium-high heat before adding any oil.
  2. Make sure your steaks are well-seasoned and completely dry for a perfect sear.
  3. Add a thin coating of avocado oil to the pan and let it heat up.
  4. Place the steaks in the pan and sear for about 4 minutes per side. They should release easily without sticking.
  5. Reduce heat and add butter, smashed garlic cloves, and rosemary sprigs. Tilt the pan and baste the steaks with the butter.
  6. Remove from heat and rest the steaks for at least 10 minutes before slicing against the grain. Use a thermometer if needed: 135°F for medium rare, 145°F for medium.

Sauce Directions

  1. In the same pan over medium heat, add shallots and mushrooms. Sauté for 1–2 minutes.
  2. Add butter, red wine, and beef stock. Stir and let simmer for 10 minutes.
  3. Add a cornstarch slurry, salt, and plenty of black pepper. Stir until thickened and serve over steak.
