Directions
- Heat a stainless clad pan over medium-high heat before adding any oil.
- Make sure your steaks are well-seasoned and completely dry for a perfect sear.
- Add a thin coating of avocado oil to the pan and let it heat up.
- Place the steaks in the pan and sear for about 4 minutes per side. They should release easily without sticking.
- Reduce heat and add butter, smashed garlic cloves, and rosemary sprigs. Tilt the pan and baste the steaks with the butter.
- Remove from heat and rest the steaks for at least 10 minutes before slicing against the grain. Use a thermometer if needed: 135°F for medium rare, 145°F for medium.
Sauce Directions
- In the same pan over medium heat, add shallots and mushrooms. Sauté for 1–2 minutes.
- Add butter, red wine, and beef stock. Stir and let simmer for 10 minutes.
- Add a cornstarch slurry, salt, and plenty of black pepper. Stir until thickened and serve over steak.
