Coconut and Lime Crispy Chicken Curry

Ingredients:
- 4 boneless chicken thighs
- 2 tsp salt
- 2 tsp smoked paprika
- 2 shallots sliced
- 1 red chilli sliced
- 1 chicken stock pot
- 200 ml coconut milk
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 lime
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- Bunch fresh chopped corriander

Directions
- Coat the chicken: Toss chicken pieces in cornstarch until well coated.
- Heat the oil: In a large skillet, warm coconut oil over medium heat.
- Fry chicken: Add the coated chicken and cook until crispy and golden on all sides, about 5-7 minutes. Remove and set aside.
- Sauté aromatics: In the same pan, add chopped onion and minced garlic. Cook until soft and fragrant.
- Add spices: Stir in curry powder and turmeric, cooking for 1 minute.
- Pour coconut milk: Slowly add coconut milk, stirring to combine and bring to a gentle simmer.
- Return chicken: Add the crispy chicken back to the pan and cook in the sauce for 5 minutes.
- Add lime: Stir in lime juice and zest. Season with salt and pepper to taste.
- Serve hot with rice or naan to enjoy all the flavors.
