Bright, sweet, and slightly spicy—this Chili Lime Agave Chicken delivers bold Mexican-inspired flavors with juicy grilled or baked chicken that’s quick to make and impossible to resist.
Ingredients:
- 4 boneless, skinless chicken breasts or thighs
- 3 tablespoons agave nectar
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- In a bowl, whisk together agave nectar, lime juice and zest, chili powder, cumin, minced garlic, olive oil, salt, and pepper to create the marinade.
- Add chicken to the marinade, coating each piece thoroughly. Cover and refrigerate for at least 30 minutes — up to 4 hours for enhanced flavor.
- Preheat grill to medium-high heat (or oven to 425°F / 220°C if baking).
- If grilling: Grill chicken for 5–6 minutes per side until internal temperature reaches 165°F (74°C) and chicken is caramelized and juicy.
- If baking: Place chicken on a baking sheet lined with foil or parchment. Bake for 20–25 minutes, flipping once and basting with leftover marinade halfway through.
- Remove chicken and let rest for 5 minutes before slicing. Garnish with chopped cilantro and lime wedges.
