Instructions

  1. In a bowl, whisk together agave nectar, lime juice and zest, chili powder, cumin, minced garlic, olive oil, salt, and pepper to create the marinade.
  2. Add chicken to the marinade, coating each piece thoroughly. Cover and refrigerate for at least 30 minutes — up to 4 hours for enhanced flavor.
  3. Preheat grill to medium-high heat (or oven to 425°F / 220°C if baking).
  4. If grilling: Grill chicken for 5–6 minutes per side until internal temperature reaches 165°F (74°C) and chicken is caramelized and juicy.
  5. If baking: Place chicken on a baking sheet lined with foil or parchment. Bake for 20–25 minutes, flipping once and basting with leftover marinade halfway through.
  6. Remove chicken and let rest for 5 minutes before slicing. Garnish with chopped cilantro and lime wedges.
